Irresistible sweet coconut slices

These sweet coconut slices are absolutely delicious and are so simple to make with only 4 ingredients!

Great as an afternoon snack or with a cup of tea, these sweet coconut slices (known as Anzac biscuits) are typically eaten on the 25th April to mark a national remembrance day in Australia & New Zealand for those who died during the First World War.

Anzac slice plate

Ingredients (makes 12 slices):

  • 1.5 cups of oats

  • 3/4 cup desiccated coconut

  • 1/2 cup honey/ maple syrup/ agave

  • 1/2 cup coconut oil, melted

Anzac slices:

  1. Heat the oven to 170.

  2. Mix all ingredients in a bowl & turn out onto a lined baking tray.

  3. Flatten the mixture across the tray using your fingers or the back of a spoon.

  4. Bake in the oven for 8-10 minutes until the top is golden brown. Leave to cool in the tin before cutting into slices.

Variations:

Why not try adding in raisins, chia seeds or the juice of half an orange & its zest to the slices before baking. YUM!
