Easy coconut & strawberry overnight oats

These overnight oats are so easy to make and are guaranteed to make you feel great in the morning. 

Prep this in batches so you have something delicious to wake up to everyday. Try different toppings for variety!

Coconut & strawberry overnight oats!

Ingredients (serves 1):

  • 40g oats

  • 75ml almond milk

  • 1 tbsp greek yogurt

  • 1.5 tsp chia seeds

  • 2 tsp honey

  • 4 strawberries, chopped

  • 1 tbsp peanut butter

  • Desiccated/ shredded coconut 

Directions:

  1. Mix together the oats, milk, greek yogurt, chia seeds and 1 tsp honey. Leave to hydrate overnight or for a few hours if you're short on time.

  2. Before serving, top with peanut butter, strawberries, honey and desiccated coconut. If you want the oats to have a creamier consistency, add some more milk before serving.

Variations:

  1. For something more indulgent, swap the fresh strawberries for jam

  2. Alternative toppings: chopped apple, cinnamon & pecans; peanut butter, granola & chocolate chips; blueberries, granola & peanut butter
