Sweetcorn fritters with chunky guacamole
Brunch is still one of the best meals of the decade, so I'm always looking at ways I can spruce up store cupboard essentials to get our tastebuds excited in the morning!
Using a few simple ingredients, these sweetcorn fritters make a healthy and delicious alternative to our regular brunch staples. The recipe is very flexible, so feel free to substitute ingredients for what you have available. I really recommend serving them with lime and hot sauce - Cholula hot sauce is a personal favourite of mine.

Ingredients (serves 2, makes approximately 6-8 fritters):
Sweetcorn fritters:
1 red onion, finely diced
1 can of corn
1 small handful of coriander, chopped
2 eggs, beaten
50g wheat flour
Small handful grated cheese (optional)
1/2 lime, wedges
Hot sauce (essential!)
Chunky guacamole:
Extra virgin olive oil (optional)
1 avocado
Tomatoes, chopped. Deseeded if using large tomatoes
1/2 lime
Sweetcorn fritters:
Add 3/4 of the red onion, 1/2 of the coriander, corn, eggs and flour to a bowl and stir to combine. Add the grated cheese if using and season with salt and pepper.
Heat some oil over a medium heat and cook the fritters for approximately 2-3 minutes on each side or until browning.
Serve with chunky avocado salsa, lime wedges and hot sauce.
Chunky guacamole:
Add the tomatoes, juice of half a lime and the remaining 1/4 red onion to a bowl. Season with salt, pepper and stir to combine.
Cut the avocado into chunks and add to a bowl with a drizzle of extra virgin olive oil and the leftover coriander.
Mix, taste and adjust seasoning if needed.
Variations:
Why not try adding some courgette to the fritter mix, swapping out the red onion for spring onions or crumbling over some feta on your finished dish - YUM!
